Mini Lemon Flower Tarts
Tools:
Large Flower or Star Cookie Cutter
Wax Paper

Spatula Spreader (Cutco)
Mini Cupcake Pan & Regular Cupcake Pan

3 Forks and 2 Spoons

Ingredients:
1 Box Ready to Bake Roll-Out Pie Crusts
1 Jar Lemon Spread or Jam
1 Egg
1 TSBP Water
Powdered Sugar to Sprinkle
Directions:
1. Allow your pie crust to warm up to room temperature.
2. Remove the pie crust from the tin pans and place the dough onto the wax paper. Use 2 pieces of wax paper: one piece of paper on the table and
the other piece of paper over the dough. Ensure the dough rolls out to an even ¼” thickness an all sides.
3. Press the Flower or Star cutter into pie dough multiple times. Remove excess dough from around the pressed out flowers or stars and save for
later.
4. Turn the mini cupcake pan upside down and spray every second “cup” with vegetable spray.
5. Gently lay one of the flowers tarts on one of the cupcake cups. Spread the petals as much as possible.
6. Roll out excess dough and press out more flowers or stars. Add flowers and stars to the mini cupcake pan until the pan is full.
7. Prick each flower and star a few times with a fork.
8. Once all of your flower tarts have been draped over the mini cupcake cups, refrigerate for 30 minutes to prevent the dough from shrinking.
9. Pre-heat the oven to 400?F.
10. Use an egg wash on the outside of the flower tarts.
Egg Wash (Egg + 1 TBSP water. Mix with a fork until frothy. Paint mixture on using a paintbrush.)
11. Bake the pie dough for 5 to 6 minutes.
12. Allow the pie dough to cool for a few minutes in the mini cupcake pan before removal. Using 2 forks, transfer the half-baked flower tarts to the
regular cupcake pan and use the egg wash once again.
13. Spoon the lemon spread or jam into the center of each of the flowers/stars and return to the oven for another 5 to 6 minutes.
14. Allow the tarts to cool in the cupcake pan. Remove the tarts from the cupcake pan using the forks and plate. If you remove the flower tarts before
they are cool, then they will lose their shape and fall flat. Sprinkle with powdered sugar just before serving.
